Citrus Glazed Goat Skewers with Veggie Crumble
A sweet and tangy twist on traditional skewers, paired with a crunchy veggie crumble for a delightful summer dish.
Ingredients
- β1 package (about 20 skewers) goatskewer
- β1 cup freshly squeezed juice (orange, lemon, and lime) citrus
- β2 cups mixed colorful vegetables (bell peppers, onions, mushrooms, cherry tomatoes) veggie
- β1 cup gluten-free oat crumble mix crumblestore-bought or homemade

Preheat grill to medium-high heat.

In a large bowl, whisk together citrus juice, salt, and pepper.

Add the mixed vegetables to the bowl and toss to coat with the citrus glaze.

Thread the vegetables onto the goat skewers, leaving a little space between each piece.

Grill the skewers for 10-12 minutes, flipping occasionally, until the vegetables are tender.

Meanwhile, prepare the veggie crumble by mixing the gluten-free oat crumble mix with a pinch of salt.
