Chicken Citrus Pasta
A Thai-inspired pasta dish with grilled chicken, citrus-marinated sauce, and a sprinkle of pickled ginger.
Ingredients
- β1 pound chicken breastboneless, skinless
- β8 oz pastalinguine or fettuccine
- β1/2 cup citrusjuice and zest of 1 lime, 1 lemon
- β2 tablespoons pickled gingersliced
- β1 cup veggiesbell peppers, carrots, snap peas
- β2 tablespoons olive oilfor grilling
- β2 tablespoons soy saucefor marinade
- β2 cloves garlicminced
- βto taste saltfor seasoning
- βto taste pepperfor seasoning

1. Preheat grill to medium-high heat.

2. In a blender or food processor, combine citrus juice, zest, soy sauce, garlic, and 1 tablespoon olive oil. Blend until smooth.

3. Season chicken breast with salt and pepper. Grill for 5-6 minutes per side, or until cooked through.

4. Cook pasta according to package instructions until al dente. Drain and set aside.

5. In a large skillet, heat remaining 1 tablespoon olive oil over medium heat.

6. Add sliced veggies and cook for 3-4 minutes, or until tender.

7. Add citrus marinade and stir to combine.

8. Add grilled chicken and cook for an additional 2 minutes.

9. Toss cooked pasta in the skillet with chicken and veggie mixture.
