Argentinian Citrusy Beef Empanadas
A classic South American dish filled with beef and citrusy flavors, served with a side of tangy chimichurri sauce.
Ingredients
- β1 lb Ground beef
- β1/2 cup Citrusy empanada filling (see notes)
- β2 cups All-purpose flour
- β1/2 cup Lard or vegetable shortening
- β1 Egg
- β1/4 cup Water
- β1 tsp Salt
- β1/4 tsp Black pepper
- β1/4 cup Chimichurri saucesee notes
- β1 tsp Argentinian snappy paprika

1. Preheat oven to 375Β°F (190Β°C).

2. In a large bowl, combine ground beef, citrusy empanada filling, salt, and black pepper. Mix well.

3. Divide dough into 8-10 equal pieces. Roll out each piece into a thin circle.

4. Place a tablespoon of the beef mixture in the center of each dough circle. Fold the dough over the filling and press the edges together to seal.

5. Brush the tops of the empanadas with egg and sprinkle with paprika.

6. Place the empanadas on a baking sheet lined with parchment paper.

7. Bake for 20-25 minutes, or until golden brown.

8. Serve hot with a side of chimichurri sauce.

9. To make chimichurri sauce, combine parsley, oregano, garlic, red pepper flakes, red wine vinegar, olive oil, salt, and pepper in a bowl. Mix well.
