Apricot Citrus Crème Brûlée
A rich and creamy dessert featuring the sweetness of apricot and citrus, topped with a caramelized sugar crust.

- ●1 cup granulated sugar
- ●1 cup heavy cream
- ●2 tbsp apricot jam
- ●1 tsp orange zestfreshly grated
- ●1 tbsp lemon juice
- ●1 tsp vanilla extract

Preheat oven to 300°F (150°C).

In a medium saucepan, whisk together egg yolks, sugar, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and reaches 160°F (71°C).

Remove the saucepan from the heat and stir in heavy cream, apricot jam, orange zest, lemon juice, and vanilla extract.

Strain the mixture into 4-6 ramekins or small baking dishes.

Place the ramekins in a large baking dish and add hot water to come halfway up the sides.

Bake for 25-30 minutes or until set.

Remove the ramekins from the water bath and let cool to room temperature.

Cover and refrigerate for at least 2 hours or overnight.

Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin.

Caramelize the sugar with a kitchen torch or under the broiler.
