Middle Eastern Citrus and Goat Cheese Bake

- β1 bulb Crisp Fennel
- β2 slices Middle Eastern Pita Breadgluten-free
- β1/2 cup Goat Cheese
- β2 Bake Apples
- β2 tbsp Olive Oil
- β1/4 cup Fresh Mint
- βto taste Salt

Cut the fennel into bite-sized pieces and place on a baking sheet.

Drizzle with olive oil and season with salt.

Bake for 15-20 minutes or until tender and slightly caramelized.

Meanwhile, slice the oranges into thin rounds and place on a separate baking sheet.

Bake for 10-12 minutes or until slightly caramelized and tender.
