Citrus Crumble Muffins
Moist and flavorful muffins with a crumbly topping and a hint of citrus.
Ingredients
- β1 3/4 cups all-purpose flour
- β1 cup granulated sugar
- β2 tbsp dried citrus peel
- β1/2 cup unsalted butter, melted
- β2 large eggs
- β1 cup citrusy crumble topping (see below)
- β2 tbsp confectioners' sugar

1. Preheat the oven to 375Β°F (190Β°C). Line a 12-cup muffin tin with paper liners.

2. In a medium bowl, whisk together the flour, sugar, and citrus peel.

3. In a large bowl, whisk together the melted butter, eggs, and citrusy crumble topping.

4. Add the dry ingredients to the wet ingredients and stir until just combined.

5. Divide the batter evenly among the muffin cups.

6. Top each muffin with a spoonful of the remaining citrusy crumble topping.

7. Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
