Grilled Lemon Chicken with Herbed Stir-Fry
A refreshing and flavorful dish featuring marinated chicken, a citrusy herb stir-fry, and a crunchy German-inspired slaw.
Ingredients
- β1 1/2 pounds chicken breastboneless, skinless
- β2 tablespoons lemon juice
- β1 tablespoon olive oil
- β1/4 cup fresh parsley
- β1/4 cup fresh dill
- β8 ounces grass-fed beef
- β1 medium onion
- β1 medium cabbageshredded
- β1 teaspoon caraway seeds

Preheat grill to medium-high heat.

In a large bowl, whisk together lemon juice, olive oil, parsley, and dill. Add the chicken and marinate for at least 30 minutes.

Grill the chicken for 5-7 minutes per side, or until cooked through.

In a large skillet, heat a tablespoon of oil over medium-high heat. Add the beef and cook until browned, about 3-4 minutes.

Add the onion and cabbage to the skillet and cook until the vegetables are tender, about 5 minutes.

In a small bowl, mix together caraway seeds and a pinch of salt. Sprinkle over the beef and vegetables.
