Greek Chickpea Crumble Pie
A citrusy and flaky pie filled with a greek-inspired chickpea filling, topped with a crunchy crumble.
Ingredients
- β1 cup drained and rinsed chickpeas
- β2 tablespoons lemon juice
- β2 tablespoons olive oil
- β1 cup flour
- β1/2 cup water
- β1 tablespoon citrusy zestfrom 1 lemon
- β1 cup crumble (flour, sugar, butter)store-bought or homemade
- β2 tablespoons honey
- β1 teaspoon vanilla extract

Preheat oven to 375Β°F (190Β°C).

Melt 1 tablespoon of butter in a pan over medium heat. Add the chickpeas, lemon juice, and olive oil. Cook until the chickpeas are lightly browned.

In a separate bowl, mix together the flour and water to form a dough.

Roll out the dough and place it in a pie dish.

Add the cooked chickpea mixture to the pie crust.
