Pistachio French Crepes
Delicate French crepes filled with a sweet pistachio filling, perfect for a dessert or snack.
Ingredients
- β1 1/2 cups flourall-purpose flour
- β1 1/2 cups milkwhole milk
- β2 large eggslarge eggs
- β1/2 cup pistachio pastestore-bought or homemade pistachio paste
- β1 tsp citrusy zestgrated lemon or orange zest
- β2 tbsp sugargranulated sugar
- β2 tbsp butterunsalted butter, melted

In a large mixing bowl, whisk together flour, milk, eggs, and a pinch of salt. The batter should be smooth and free of lumps.

Heat a small non-stick pan over medium heat. Pour a small amount of batter into the pan and tilt to evenly coat the bottom.

Cook for 1-2 minutes, until the edges start to curl and the surface is dry.

Loosen the crepe with a spatula and flip it over. Cook for another minute.

Repeat with the remaining batter, until all crepes are cooked.

In a separate bowl, mix together pistachio paste, citrusy zest, and sugar until well combined.

To assemble the crepes, place a small amount of the pistachio filling in the center of each crepe, leaving a 1-inch border around the edges.

Fold the crepe in half over the filling, then fold in the sides and roll it up to form a neat package.
