Fruity Tagine Cake
A moist and flavorful cake infused with the sweet and tangy flavors of a tagine. Perfect for a dessert or snack.
Ingredients
- β1 cup Butter
- β1 cup Sugar
- β2 Eggs
- β1 1/2 cups All-purpose flour
- β1/2 cup Ground almonds
- β1 cup Dried tagine fruit
- β Zest of 1 orangeUse a fine grater to get the zest
- β1/4 teaspoon Cinnamon
- β1/4 cup Ghee

Preheat oven to 350Β°F (180Β°C). Grease a 9-inch (23cm) round cake pan.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.

In a separate bowl, whisk together the flour, ground almonds, and cinnamon.

Add the dry ingredients to the wet ingredients and mix until just combined.

Fold in the dried tagine fruit and orange zest.

Pour the batter into the prepared cake pan and smooth the top.

Drizzle the ghee over the top of the cake.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
