Irish Beef and Citrus Dumplings
A hearty and flavorful take on traditional Irish beef stew with a twist of citrus. This comforting dish is perfect for a cold winter's night.

- β1 lb BeefChuck or round work well
- β4-6 Irish DumplingsHomemade or store-bought
- β1 large Citrusy OnionThinly sliced
- β4-5 CarrotsMedium-sized
- β2-3 PotatoesMedium-sized
- β2 tbsp All-purpose FlourFor dumpling mixture
- β4-6 slices BaconOptional
- β1 tsp SaltTo taste
- β1 tsp Black PepperTo taste
- β2 sprigs Fresh ThymeOptional

1. Bring a large pot of salted water to a boil. Cook the dumplings according to package instructions or until they float to the surface.

2. In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside.

3. Add the sliced onion to the pot and cook until softened, about 5 minutes.

4. Add the beef to the pot and cook until browned on all sides, about 5-7 minutes.

5. Add the carrots and potatoes to the pot, along with the beef broth and thyme. Bring to a boil, then cover and transfer to the oven.

6. Bake the stew at 300Β°F (150Β°C) for 2-3 hours, or until the beef is tender.
