Vietnamese Lime Stir Fry
A quick and flavorful stir fry made with lime-infused sauce, perfect for a weeknight dinner.
Ingredients
- β2 Limejuiced
- β8 oz Rice noodlescooked
- β1 lb Chicken breastsliced
- β2 tbsp Vegetable oilfor frying
- β2 cloves Garlicminced
- β1-inch piece Gingergrated
- β1 cup Bean sproutschopped
- β1 Cucumbersliced
- β1/4 cup Cilantrochopped

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned, about 5-6 minutes. Remove from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger and cook for 1 minute, until fragrant.

Add the bean sprouts and cook for 2-3 minutes, until slightly tender.

Add the cooked noodles, sliced cucumber, and cooked chicken back into the skillet. Stir to combine.

In a small bowl, whisk together the lime juice and any remaining sauce from the skillet. Pour the sauce over the noodle mixture and stir to combine.

Sprinkle with chopped cilantro and serve immediately.
