Thai Chicken Citrus Crumble
A twist on traditional chicken dishes, this recipe combines the flavors of Thailand with a crunchy citrus crumble topping.
Ingredients
- β4 boneless chicken breasts1.5-2 lbs
- β2 tablespoons grated lime zest
- β2 tablespoons fresh lime juice
- β2 teaspoons Thai red curry paste
- β2 tablespoons coconut oil
- β1 cup rice flourgluten-free
- β1/2 cup unsalted butterchilled
- β1/2 cup brown sugar
- β1 cup crumble (store-bought or homemade)

Preheat oven to 400Β°F (200Β°C)

Season chicken breasts with salt and pepper

Heat coconut oil in a skillet over medium-high heat. Add chicken breasts and cook until browned on both sides, about 5-7 minutes per side. Transfer to a baking dish.

Mix together lime zest, lime juice, and Thai red curry paste. Pour over chicken breasts.

In a separate bowl, mix together rice flour, brown sugar, and crumble.

Dot the top of each chicken breast with unsalted butter.
