Thai Noodle Salad with Feta
A refreshing Thai-inspired salad featuring noodles, feta, and a citrusy dressing.
Ingredients
- β8 oz Thin rice noodles
- β1/2 cup Feta cheese
- β1/4 cup Fresh cilantro
- β1/2 cup Red onion
- β2-3 Thai red chili
- β2 tbsp Fresh lime juice
- β2 tbsp Citrusy dressing (store-bought)
- βto taste Salt
Instructions

Cook the rice noodles according to package instructions. Drain and set aside.

In a large bowl, combine the cooked noodles, feta cheese, cilantro, red onion, and Thai red chili.

In a small bowl, whisk together the lime juice and citrusy dressing.

Pour the dressing over the noodle mixture and toss to combine.

Season with salt to taste.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, garnish with additional cilantro if desired.
