Thai Vegetable Stir Fry
A quick and easy stir fry made with a variety of colorful vegetables, served with steamed rice.

Ingredients
- ●2 tablespoons Vegetable oil
- ●1 medium, sliced Onionthinly sliced
- ●1 cup Toor (pigeon peas)
- ●1 cup Dal (split red lentils)
- ●2 teaspoons Thai red curry paste
- ●2 tablespoons Citrusy sauce (or tamarind paste)
- ●1 teaspoon Stir-fry powder (or chili flakes)

Instructions

Heat oil in a pan over medium-high heat.

Add the onion and sauté for 2-3 minutes.

Add the toor and dal, and stir-fry for 3-4 minutes.

Add the curry paste and citrusy sauce, and stir-fry for another 2 minutes.

Add the stir-fry powder (or chili flakes), and stir-fry for 1 minute.
