Gluten-Free Clamato Braised Beef
A hearty, gluten-free beef stew made with Clamato and braised to perfection.
Ingredients
- β2 pounds Beef chuck roast
- β1 cup Clamato
- β1 medium Onion
- β3 cloves Garlic
- β2 medium Carrot
- β2 stalks Celery
- β2 tablespoons Tomato paste
- β2 cups Beef broth
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat oil in a large Dutch oven over medium-high heat.

Sear the beef chuck roast until browned on all sides, then remove and set aside.

Add the onion, garlic, carrot, and celery to the pot and cook until the vegetables are tender.

Add the Clamato, tomato paste, beef broth, salt, and pepper to the pot and stir to combine.

Return the beef to the pot and bring to a boil.

Transfer the pot to the oven and braise the beef for 2 1/2 hours, or until tender.

Remove the pot from the oven and let the beef rest for 10 minutes before slicing and serving.
