Spicy Lamb Tagine

- β1 pound Lamb shouldercut into 1-inch cubes
- β2 tablespoons Classic olive oil

- β3 cloves Grilled garlicminced

- β1/2 teaspoon Cayenne pepper

- β1/4 cup Char pine nutschopped

Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat.

Add the lamb and cook until browned on all sides, about 5 minutes.

Add the onion and cook until softened, about 5 minutes.

Add the garlic, cumin, cayenne pepper, and salt. Cook for 1 minute.

Add the dates, pine nuts, and 2 cups of water to the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.
