Mapo Tofu Stir Fry
A classic Chinese Sichuan dish made with tofu, ground pork, and a spicy sauce.
Ingredients
- β14 oz tofuExtra-firm, drained, and cut into small cubes
- β2 tablespoons mapoSpicy Sichuan bean paste
- β2 cloves classicGarlic, minced
- β1 tablespoon chineseSoy sauce
- β1 tablespoon chineseRice vinegar
- β1 teaspoon chineseGround white pepper
- β1 tablespoon classicVegetable oil
- β1 cup classicMixed bell peppers, sliced
- β2 cups classicMixed scallions, chopped

Heat the vegetable oil in a wok or large skillet over medium-high heat.

Add the garlic and cook, stirring constantly, for 30 seconds.

Add the mixed bell peppers and cook, stirring occasionally, for 3-4 minutes.

Add the tofu and cook, stirring occasionally, for 3-4 minutes.

Add the Sichuan bean paste, soy sauce, rice vinegar, and ground white pepper.

Stir to combine and cook for 1-2 minutes.

Add the mixed scallions and stir to combine.

Cook for an additional 1-2 minutes, until the scallions are slightly wilted.
