Smoky Ukrainian Beef Stew
A hearty beef stew with smoky flavors from the Ukrainian countryside, served with a side of crusty bread.
Ingredients
- β1 pound beef stew meatcut into 1-inch cubes
- β1 teaspoon smoky paprikaor to taste
- β2 cups clear brothbeef or vegetable
- β1 medium orange bell pepperdiced
- β1 medium oniondiced
- β2 tablespoons stewall-purpose flour
- β1 teaspoon saltor to taste
- β1 teaspoon black pepperor to taste
- β2 cups wateror to taste
- β1/4 cup fresh parsleychopped, for garnish

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef in batches until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.

Add the onion and bell pepper to the pot, and cook until the vegetables are tender, about 5 minutes.

Add the flour to the pot and cook for 1 minute, stirring constantly.

Gradually add the broth, whisking until smooth, and bring to a boil.

Return the beef to the pot and add the paprika, salt, and pepper. Stir to combine.

Cover the pot and transfer it to the preheated oven. Bake for 2 1/2 hours, or until the beef is tender.

Remove the pot from the oven and stir in the water. Bring the stew to a boil over high heat, then reduce the heat to low and simmer for 10 minutes.

Serve the stew hot, garnished with chopped parsley.
