Panforte Crunch Bites
A crispy, Italian-inspired dessert that combines the flavors of panforte with a crunchy almond topping.
Ingredients

- β1/2 cup Granulated sugar
- β1/4 cup Unsalted butter, softened
- β2 large eggs Eggs
- β1/2 cup Dried fruit (such as cranberries and cherries)
- β1/4 cup Crushed almonds
- β1 teaspoon Baking powder
- β1/4 teaspoon Salt
- β1 teaspoon Vanilla extract

Preheat the oven to 350Β°F (180Β°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the almond flour, sugar, baking powder, and salt.

In a large bowl, whisk together the softened butter, eggs, and vanilla extract.

Add the dry ingredients to the wet ingredients and mix until just combined.

Stir in the dried fruit and crushed almonds.

Scoop the dough into balls, about 1 inch in diameter.

Place the balls onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
