Australian Vegetable Pie
A comforting, vegetarian pie filled with a variety of vegetables. This recipe is perfect for a chilly evening.
Ingredients
- β2 Carrotspeeled and diced
- β3 Potatoespeeled and diced
- β1 Zucchinisliced
- β1 Onionchopped
- β1 cup Mushroomssliced
- β1 Pie crusthomemade or store-bought
- β2 tbsp Vegetable oilfor brushing pie crust
Instructions

Preheat the oven to 375Β°F (190Β°C).

Roll out the pie crust and place it in a 9-inch pie dish.

In a large pan, heat 1 tablespoon of vegetable oil over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the diced carrots and potatoes to the pan and cook for 5 minutes.

Add the sliced zucchini to the pan and cook for an additional 2-3 minutes.

Season the vegetable mixture with salt and pepper to taste.

Pour the vegetable mixture into the pie crust and brush the edges with the remaining 1 tablespoon of vegetable oil.

Roll out the remaining pie crust to fit the top of the pie and crimp the edges to seal.

Cut a few slits in the top of the pie to allow steam to escape.

Brush the top of the pie with a little bit of water and sprinkle with a pinch of salt.
