Baked Ukrainian Pasta
A hearty, comforting, and warming vegan dish inspired by Ukrainian cuisine.
Ingredients
- β500g Whole wheat pasta
- β2 medium Roasted carrots
- β1 medium Finely chopped onion
- β200g Mushrooms
- β200g Tomato puree
- β2 tbsp Nutritional yeast
- β2 tbsp Olive oil
- βa handful Chopped fresh parsley
- βto taste Salt
- βto taste Black pepper
Instructions

Preheat the oven to 180Β°C (350Β°F).

Cook the pasta according to the package instructions.

In a pan, heat the olive oil over medium heat.

Add the chopped onion and cook until softened.

Add the mushrooms and cook until they release their liquid and start to brown.

Add the roasted carrots and cook for a further 2 minutes.

Stir in the tomato puree and nutritional yeast.

Combine the cooked pasta with the vegetable mixture.

Season with salt and black pepper to taste.

Transfer the pasta to a baking dish and top with chopped parsley.

Bake in the preheated oven for 20 minutes.
