Som Tam (Papaya Salad)
A spicy and sour Thai salad made with shredded green papaya, peanuts, and a variety of vegetables. This recipe is a classic Thai street food.
Ingredients

- β1/4 cup peanuts
- β2 medium tomatoes
- β2-3 chilies
- β2 tablespoons fish sauce
- β1 tablespoon palm sugar
- β2 tablespoons lime juice
- βto taste salt
- β2 tablespoons peanut oil
- β1 cup bean sprouts

Shred the green papaya into long, thin strips.

In a large mortar, combine the chilies, fish sauce, palm sugar, and lime juice. Pound until well combined and slightly smooth.

Add the peanuts and pound until they are crushed and well combined with the chili mixture.

Add the shredded papaya and pound until it is coated with the chili mixture.

Add the tomatoes, salt, and bean sprouts. Toss until well combined.

Heat the peanut oil in a wok or large skillet over medium-high heat.
