Quinoa and Chilli Bake
A hearty Italian-inspired quinoa and chilli bake, perfect for a cozy evening. This recipe combines the nutty flavor of quinoa with the spicy kick of chilli.
Ingredients
- β1 cup quinoaany color
- β1 tsp chilli flakesor more to taste
- β1/4 cup bakecrushed
- β2 tbsp olive oilfor greasing
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 cup tomato saucehomemade or store-bought
- β1/2 cup milkdairy or non-dairy
- β1/2 cup cheeseshredded
- βto taste salt

Preheat oven to 375Β°F (190Β°C).

Grease a 9x13 inch baking dish with olive oil.

Cook quinoa according to package instructions.

In a large pan, heat olive oil over medium heat.

Add chopped onion and cook until softened.

Add minced garlic and cook for 1 minute.

Add chilli flakes and cook for 1 minute.

Stir in tomato sauce and bring to a simmer.
