Cozy Crumble Muffins

- β1 cup cozy oats
- β1/2 cup buttermelted
- β1 cup sugar
- β2 eggs
- β1 tsp vanilla extract
- β1 tsp lemon zestoptional

- β1 cup crumble topping

Preheat oven to 375Β°F (190Β°C). Line a 12-cup muffin tin with paper liners.

Roll out the flaky pastry to a thickness of about 1/8 inch.

Cut out 12 squares of pastry, about 3 inches per side.

In a large bowl, whisk together the cozy oats, sugar, eggs, vanilla extract, lemon zest (if using), and salt.

Add the melted butter to the oat mixture and stir until just combined.

Divide the oat mixture evenly among the pastry squares, spooning a generous amount onto each square.

Fold the pastry squares in half to enclose the filling, pressing the edges to seal.
