Norwegian Lamb Stew
A hearty and flavorful stew inspired by Norwegian cuisine, made with tender lamb and rich creamy sauce.
Ingredients
- β1 pound Lamb shoulder, cut into 1-inch cubes
- β1 medium Onion, chopped
- β3 cloves Garlic, minced
- β2 medium Carrots, peeled and chopped
- β2 large Potatoes, peeled and chopped
- β2 tablespoons All-purpose flour
- β6 slices Bacon, diced
- β2 cups Chicken broth
- β1 cup Heavy cream
- β2 tablespoons Dill, chopped

Brown the lamb in a large skillet over medium-high heat, about 5 minutes.

Remove the lamb from the skillet and set aside.

Add the diced bacon to the skillet and cook until crispy, about 5 minutes.

Remove the bacon from the skillet and set aside with the lamb.

Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.

Add the chopped carrots and potatoes to the skillet and cook for 5 minutes.

Add the flour to the skillet and stir to combine with the vegetables.

Gradually add the chicken broth, whisking continuously to avoid lumps.

Return the lamb and bacon to the skillet and bring the stew to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.
