Norwegian Chickpea Stew
A hearty and comforting stew with the flavors of Norway, made with chickpeas and a touch of creamy richness.
Ingredients

- β1 lb glazed norwegian sausageCan be substituted with regular sausage
- β1 medium onion
- β2 medium carrot
- β2 large potato
- β1/4 cup creamyHeavy cream or half-and-half
- β2 cups stew

Heat a large pot over medium-high heat.

Add the sliced norwegian sausage and cook until browned, breaking into smaller pieces as it cooks.

Add the diced onion, carrot, and potato, and cook until the vegetables are slightly tender.

Add the chickpeas, stew, and browned sausage. Stir to combine.

Bring the stew to a simmer, then reduce the heat to low and let cook for 20-25 minutes, or until the vegetables are tender.
