Date Kheer
A traditional Indian dessert made with dates, creamy milk, and spices.
Ingredients
- β1 cup Dates, pitted
- β1 cup RiceLong-grain rice
- β2 cups MilkFull-fat milk
- β1 cup Sugar
- β2 tablespoons GheeClarified butter
- β1/2 teaspoon CardamomGround cardamom
- β1/2 teaspoon Rose water

Rinse the rice and soak it in water for 30 minutes.

Drain the water and grind the rice into a fine paste.

In a large pot, combine the milk, sugar, and ground cardamom.

Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the milk starts to boil.

Add the rice paste and dates to the pot.

Reduce the heat to low and simmer, stirring constantly, for 10-12 minutes or until the kheer thickens.

Remove from heat and stir in the ghee and rose water.

Let the kheer cool to room temperature before serving.

Serve chilled or at room temperature.
