Creamy Irish Stew
A twist on the classic Irish stew, this vegetarian version swaps the traditional beef for a creamy, flavorful twist.
Ingredients

- β4 medium Carrots
- β1 large Onions
- β8 oz Mushrooms
- β1 packet Creamy sauce mix
- β2 cups Vegetable broth
- β1/4 cup Fresh parsley
Instructions

Heat oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the diced carrots and cook for an additional 2 minutes.

Pour in the vegetable broth and bring the mixture to a boil.
