Irish Lamb Casserole
A hearty, comforting casserole made with tender lamb and creamy mashed potatoes.
Ingredients
- β1 1/2 pounds Lamb shoulder
- β1 large Onion
- β3 cloves Garlic
- β2 medium Carrots
- β3 large Potatoes
- β1 cup Milk
- β2 tablespoons Butter
- β2 tablespoons All-purpose flour
- β1 cup Chicken broth
- β1 cup Cheddar cheese

Preheat oven to 375Β°F (190Β°C).

Cut the lamb into 1-inch pieces and season with salt and pepper.

Heat butter in a large skillet over medium-high heat. Add the lamb and cook until browned, about 5 minutes.

Remove the lamb from the skillet and set aside.

Add more butter to the skillet if necessary, then add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the carrots and cook for 5 minutes.

Add the flour and stir to combine.

Gradually add the chicken broth, whisking continuously, and bring to a boil.

Return the lamb to the skillet and stir to combine.

Transfer the lamb mixture to a 9x13-inch baking dish.

Slice the potatoes thinly and layer them on top of the lamb mixture.

Dot the top of the potatoes with butter.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for another 10-15 minutes, or until the potatoes are golden brown.
