Irish Frittata
A creamy Irish-inspired frittata, perfect for a weekend brunch.
Ingredients

- ●1 cup Irish cheddar cheeseshredded
- ●1/2 cup heavy creamdivided

Preheat oven to 375°F (190°C).

In a large skillet, sauté the diced potatoes, chopped onions, and minced garlic in a little bit of oil until tender.

In a separate bowl, whisk together the beaten eggs, 1/4 cup of heavy cream, and a pinch of salt and pepper.

Pour the egg mixture over the potatoes and onions in the skillet.

Transfer the skillet to the preheated oven and bake for 18-20 minutes, or until the eggs are set.

Remove the skillet from the oven and sprinkle with shredded Irish cheddar cheese.

Return the skillet to the oven and bake for an additional 2-3 minutes, or until the cheese is melted and bubbly.
