Creamy Trofie Pasta with Roasted Chestnuts
A creamy Italian-inspired pasta dish loaded with roasted chestnuts and trofie pasta.
Ingredients
- β8 oz (225g) trofie pasta
- β1 cup (115g) fresh or frozen chestnutsroasted
- β2 tbsp (30g) unsalted butter
- β2 cloves garlic
- β1/2 cup (120ml) heavy cream
- β1/2 cup (120g) parmesan cheese
- βto taste salt
- βchopped (optional) fresh parsley

Preheat the oven to 400Β°F (200Β°C).

Roast the chestnuts in the oven for 15-20 minutes, or until tender.

Cook the trofie pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet, melt the butter over medium heat. Add the garlic and cook for 1-2 minutes until fragrant.

Add the heavy cream to the skillet and bring to a simmer. Reduce the heat to low and let cook for 2-3 minutes until slightly thickened.

Stir in the parmesan cheese until melted. Season with salt to taste.

Add the cooked trofie pasta to the skillet and toss with the creamy sauce.

Stir in the roasted chestnuts and cook for an additional 1-2 minutes until heated through.
