Malaysian Coconut Rice Pilaf
A flavorful and aromatic rice pilaf dish with a hint of Malaysian spices, infused with coconut milk for added creaminess.
Ingredients

- ●2 cups Coconut milk
- ●2 tablespoons Light coconut oil
- ●1 small Oniondiced
- ●2 cloves Garlicminced
- ●1 teaspoon Curry powder
- ●1/2 teaspoon Salt
- ●2-3 leaves Malaysian curry leavesoptional

Heat oil in a large saucepan over medium heat.

Add diced onion and sauté until translucent, about 3-4 minutes.

Add minced garlic and sauté for another minute.

Add curry powder and sauté for 1 minute.

Add uncooked rice and stir to combine with curry mixture.
