Mediterranean Paella with Fish
A flavorful and nutritious Mediterranean-inspired paella dish with fish as the main protein, perfect for a light dinner.
Ingredients
- ●1 pound Fish (Cod or Tilapia)cut into 1-inch pieces
- ●2 cups Mediterranean Rice Mixavailable at most grocery stores
- ●2 tablespoons Olive Oilfor sautéing
- ●1 medium Onionchopped
- ●3 cloves Garlicminced
- ●1 can (14.5 oz) Tomatodiced, preferably fire-roasted
- ●1 medium Bell Pepperdiced
- ●1 can (14 oz) Artichoke Heartsdrained and chopped
- ●1/4 cup Feta Cheese (optional)crumbled

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the chopped onion and sauté for 3-4 minutes, until softened.

Add the minced garlic and sauté for 1 minute, until fragrant.

Add the diced bell pepper and sauté for 2-3 minutes, until tender.

Add the fish pieces and cook for 2-3 minutes, until lightly browned.

Add the Mediterranean rice mix, canned tomatoes, artichoke hearts, and feta cheese (if using).

Stir to combine, then add 2 cups of water.

Bring to a boil, then reduce heat to low and simmer, covered, for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
