Creamy Mediterranean Lentil Soup
A hearty and comforting soup that combines the flavors of the Mediterranean with the nutrition of lentils.
Ingredients
- β1 cup, rinsed and drained Lentils, brown
- β4 cups Vegetable broth, low-sodium
- β2 tablespoons Olive oiloptional
- β1 medium Onion, diced
- β2 cloves Garlic, minced
- β1 can, 14 oz Canned diced tomatoesoptional
- β1/4 cup Feta cheese, crumbledoptional
- β1/4 cup Fresh parsley, choppedoptional
- β1/2 cup Cream, heavy or half-and-halfoptional
- βto taste Salt
- βto taste Black pepper
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the lentils, broth, diced tomatoes (if using), and salt and pepper to taste.

Bring to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.

Use an immersion blender to puree the soup to your desired consistency.

Stir in the feta cheese (if using) and cream (if using).
