Middle Eastern Collard Greens
A delicious and healthy side dish that combines the flavors of the Middle East with the nutrients of collard greens.
Ingredients
- ●2 bunches Collard Greensstems removed
- ●3 cloves Garlicminced
- ●1/2 cup Baba Ganoushstore-bought or homemade
- ●1 tsp Middle Eastern Spicestore-bought or homemade
- ●2 tbsp Olive Oilfor sautéing

1. In a large pot of boiling salted water, blanch the collard greens for 5-7 minutes, or until tender.

2. Drain the greens and set aside.

3. In a large skillet, heat the olive oil over medium heat.

4. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.

5. Stir in the baba ganoush and cook for an additional 1-2 minutes.

6. Add the blanched collard greens to the skillet and stir to combine with the garlic and baba ganoush mixture.

7. Season with Middle Eastern spice to taste.

8. Serve the collard greens hot, garnished with additional baba ganoush if desired.
