Smoky Lamb Stew
A hearty, comforting stew featuring tender lamb and a rich, smoky flavor.
Ingredients
- ●2 pounds lamb shoulderbone-in
- ●1 large onionchopped
- ●3 cloves garlicminced
- ●2 teaspoons smoked paprika
- ●2 tablespoons tomato paste
- ●1 cup red wine
- ●2 cups beef broth
- ●1 cup Greek yogurt
- ●1/4 cup fresh parsleychopped

Preheat oven to 300°F (150°C).

Season lamb shoulder with salt and pepper.

In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat. Sear lamb shoulder until browned on all sides, about 5 minutes. Remove lamb from pot and set aside.

Add remaining oil to pot, then sauté onion and garlic until softened, about 5 minutes.

Add smoked paprika, tomato paste, and red wine to pot. Stir to combine, then bring mixture to a simmer.

Return lamb shoulder to pot, then add beef broth. Cover pot with lid and transfer to preheated oven.

Braise lamb in oven for 2 1/2 hours, or until tender.

Remove pot from oven and stir in Greek yogurt. Let stew rest for 10 minutes before serving.
