Filipino Chicken Stew
A hearty and flavorful stew originating from the Philippines, featuring chicken as the main protein. This dish is perfect for a cold winter night.

- β3 cloves, minced Garlic
- β2 tablespoons Tomato pasteCanned or homemade
- β2 cups Chicken brothLow-sodium
- β2 tablespoons Fish sauceFilipino-style
- β2 teaspoons Patis (fish sauce)Filipino-style
- β1 teaspoon Black pepper
- β1 teaspoon Salt

Heat oil in a large pot over medium-high heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Remove the chicken from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is translucent, about 3-4 minutes.

Add the tomato paste and cook for 1 minute, stirring constantly.

Add the chicken broth, fish sauce, patis, black pepper, and salt. Stir to combine.
