Syrian Eggplant Gratin
A creamy twist on a classic Syrian dish, featuring eggplant in a rich gratin.
Ingredients
- β2 medium Eggplant
- β1 cup Creamy cheesesuch as brie or feta
- β1/2 cup Syrian cheesesuch as akkawi or halloumi
- β2 tbsp Olive oil
- β Saltto taste
- β Black pepperto taste
- β2 cloves Garlicminced

Preheat the oven to 375Β°F (190Β°C).

Cut the eggplant into 1/2-inch thick slices.

In a large bowl, mix together the creamy cheese, Syrian cheese, olive oil, salt, black pepper, and garlic.

Add the eggplant slices to the bowl and toss to coat with the cheese mixture.

Transfer the eggplant mixture to a 9x13 inch baking dish.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the eggplant is tender.
