Creamy Thai Chicken Skillet
A flavorful and spicy Thai-inspired dish made with chicken, creamy sauce, and served in a skillet.
Ingredients
- β1.5 lbs Chicken breastsBoneless and skinless
- β1 SkilletAny material, e.g. cast iron, stainless steel
- β1 can (14 oz) Coconut milkFull-fat for creaminess
- β2 tbsp Thai red curry pasteAdjust to taste
- β1 tsp Fish sauceOptional, but authentic
- β1 tsp Soy sauceOptional, but adds depth
- β1 tsp HoneyOptional, but balances flavors
- β1/4 cup Fresh basilChopped
- β1-2 Fresh chiliesOptional, to taste
- βto taste SaltUse as needed

Heat the skillet over medium-high heat.

Add 1-2 tbsp of oil and swirl to coat the pan.

Add the chicken and cook until browned, about 5-6 minutes.

Remove the chicken and set aside.

Add the curry paste and cook, stirring constantly, for 1-2 minutes.

Pour in the coconut milk and bring to a simmer.

Add the fish sauce, soy sauce, and honey (if using).

Return the chicken to the skillet and simmer until cooked through, about 5-7 minutes.
