Tunisian Chicken Tagine with Pistachio Pesto
A flavorful and aromatic Tunisian-inspired chicken tagine with a creamy pistachio pesto sauce. Serve with couscous or crusty bread for a hearty meal.
Ingredients
- β1 1/2 pounds chicken breastcut into small pieces
- β2 tablespoons olive oilfor cooking
- β1 medium onionchopped
- β3 cloves garlicminced
- β pistachio pesto (see below)
- β1 cup chicken brothlow-sodium
- β1 teaspoon tagine spice blendor to taste
- β1 cup couscous

Heat the olive oil in a large Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the chicken to the pot and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.

Add the chicken broth and tagine spice blend to the pot. Stir to combine and bring to a simmer.

Return the chicken to the pot and cook, covered, until the chicken is cooked through, about 20-25 minutes.

Stir in the pistachio pesto and cook for an additional 2-3 minutes, until heated through.
