Vietnamese Peanut Stir Fry
A creamy and flavorful Vietnamese-inspired peanut stir fry.
Ingredients
- β2 tablespoons Peanut oil
- β1 medium Onion
- β2 medium Carrots
- β1/4 cup Peanuts
- β2 tablespoons Thai red curry paste
- β1/4 cup Coconut milk
- β2 tablespoons Lime juice
- β1 tablespoon Soy sauce
- β1 teaspoon Sugar

Heat the peanut oil in a large skillet or wok over medium-high heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the carrots and cook for an additional 4-5 minutes, or until tender.

Add the peanuts and cook for 1-2 minutes, or until fragrant.

Add the Thai red curry paste and cook for 1 minute.

Pour in the coconut milk and bring the mixture to a simmer.

Reduce the heat to low and let cook for 2-3 minutes, or until the sauce has thickened.
