Crisp Lentil Tagine
A flavorful and nutritious North African-inspired stew made with lentils, crunchy vegetables, and aromatic spices.
Ingredients
- ●1 cup Red lentils
- ●1 head, chopped Crisp
- ●1 medium, sliced Bitter gourd
- ●1/2 cup Mediterranean olives
- ●2 tsp Tagine spice mix
- ●2 tbsp Olive oil
- ●to taste Salt
- ●to taste Black pepper
- ●2 cups Water
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the chopped crisp and sauté until softened, about 5 minutes.

Add the sliced bitter gourd and cook for another 5 minutes.

Add the red lentils, tagine spice mix, salt, and black pepper. Stir well to combine.

Add the water and bring to a boil.

Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender.

Stir in the Mediterranean olives and cook for 1-2 minutes.

Taste and adjust the seasoning as needed.

Serve hot, garnished with chopped crisp and a dollop of yogurt (optional).
