Slovakian Chicken Goulash
A hearty Slovakian-inspired dish featuring tender chicken in a flavorful goulash sauce.
Ingredients

- β2 pitted dates datechopped
- β1/4 teaspoon cayenne pepperoptional
- β1/2 teaspoon caraway seedsoptional
- β1 pound slovakian sausagesuch as kielbasa
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato pasteoptional
- β1 cup crispshredded (for garnish)

Heat 1 tablespoon oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5-7 minutes.

Remove the chicken from the pot and set aside.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Stir in the chopped dates, caraway seeds, and cayenne pepper (if using).

Add the Slovakian sausage and cook, breaking it up with a spoon, until browned, about 5 minutes.

Add the tomato paste and cook, stirring constantly, for 1 minute.

Add the chicken broth and bring the mixture to a simmer.

Return the chicken to the pot and cook, covered, until the chicken is cooked through and the sauce has thickened, about 20-25 minutes.
