Peruvian-Style Roasted Chicken
A flavorful and moist roasted chicken dish inspired by the cuisine of Peru, marinated in a mix of Peruvian spices and herbs, then roasted to perfection.
Ingredients

- ●2 tsp chicken seasoningPeruvian-style

- ●1 tsp paprika
- ●1 tsp cumin
- ●1 tsp coriander
- ●1 tsp salt
- ●1 tsp black pepper
- ●2 tbsp lemon juicefresh

Preheat oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the chicken seasoning, garlic powder, paprika, cumin, coriander, salt, and black pepper.

Rub the spice mixture all over the chicken, making sure to get some under the skin as well.

In a large skillet, heat the olive oil over medium-high heat. Sear the chicken on all sides until browned, about 5 minutes.

Transfer the chicken to a roasting pan and brush with lemon juice.

Roast the chicken in the preheated oven for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C).
