Crispy Cantonese Toast
A simple Cantonese-style toast dish with a crispy twist.
Ingredients

- β4 slices Cantonese-style bread
- β4 eggs Scrambled eggs
- β1/4 cup, chopped Green onions
- β1/4 cup Crispy fried shallots
- β2 tablespoons Soy sauce

1. Heat 1 tablespoon of vegetable oil in a pan over medium heat.

2. Cook the Cantonese-style bread until it's crispy and golden brown, about 2-3 minutes per side.

3. In a separate pan, scramble the eggs over medium heat until they're cooked through.

4. Add the chopped green onions and crispy fried shallots to the pan with the scrambled eggs and stir to combine.

5. Brush the cooked bread with the remaining 1 tablespoon of vegetable oil.
