Peruvian Potato Fritters

- β2 large Russet potatoespeeled and grated
- β1/2 cup All-purpose flourfor dusting
- β1/4 cup Bread crumbsoptional
- β1 Eggbeaten
- β2 tbsp Peruvian aji amarillo pepper sauceor substitute with hot sauce
- β1/2 cup Vegetable oilfor frying

Heat oil in a large skillet over medium-high heat.

In a bowl, combine grated potatoes, flour, and a pinch of salt. Mix well.

Add beaten egg and mix until combined.

If using bread crumbs, fold them into the potato mixture.
