Ethiopian Lentil Stew

- β1 cup red lentilsrinsed and drained
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 inches gingergrated
- β1/2 teaspoon crushed red pepperoptional
- β1 teaspoon turmericground
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- β1 teaspoon saltground
- β1/2 teaspoon black pepperground

Heat oil in a large pan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for 1 minute.

Stir in the crushed red pepper, turmeric, cumin, coriander, salt, and black pepper. Cook for 1 minute.
