Vegan Korean-Style Stir-Fry

- β1 cup Crispy Korean-style vegetables
- β2 medium Carrotspeeled and sliced
- β2 tbsp Rice vinegar
- β1 tbsp Gochujang
- β1 tsp Sesame oil
- β1 tsp Gingergrated
- β1 tsp Garlicminced
- β1 tsp Soy sauce (make sure it's vegan)
- β1/4 cup Chopped green onionsfor garnish

Instructions

Heat sesame oil in a large skillet or wok over medium-high heat.

Add ginger and garlic and stir-fry for 1 minute.

Add the carrots and Korean-style vegetables and stir-fry for 3-4 minutes, or until tender.

In a small bowl, whisk together rice vinegar, gochujang, and soy sauce.
