Crispy Almond Chicken Stir Fry
A delicious and easy-to-make chicken stir fry with crispy almonds, perfect for a weeknight dinner.
Ingredients
- β1 pound chicken breastsboneless, skinless
- β2 tablespoons coconut oil
- β1 medium onion
- β1 medium bell pepper
- β2 cloves garlic
- β1 cup almondsliced and toasted
- β2 tablespoons soy sauce
- β1 tablespoon honey
- β1 tablespoon stir-fry sauce
- βto taste salt

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of coconut oil to the skillet.

Add the onion, bell pepper, and garlic to the skillet and cook until the vegetables are tender-crisp, about 3-4 minutes.

Add the soy sauce, honey, and stir-fry sauce to the skillet and stir to combine.

Return the chicken to the skillet and stir to coat with the sauce.

Sprinkle the toasted almonds over the top of the chicken and serve hot.
